I think the reason for it is historically only the very richest could actually manage to wear white clothes as most people walked around with some amount of dirt on them - its a symbolism of elitism effectively dating back well over a hundred years. Obviously with living standards these days even the scumiest of the scum tennis players can just about get their whites white.

The players also wear whites for health reasons. White clothes reflect the sun's heat better than clothes of other colours, helping players to avoid heatstroke during the sweltering British summer. I think this will be especially important this year.

If players take enough tumbles (eg Nadal under the net at Queens) then the outfits can end up matching the surface - the more so if they start out white.
