In a recent interview, Froch says he has been on weight for the past two weeks. Does this mean he's at 169lbs or his weight is down to his boil down weight?

Suerly if he's at 168 it cant be good for him.

Probably means he is on target.

Froch doesn't drink alcohol and trains year round. in the past he's been able to eat on the day of weigh in so he's never far from his fighting weight. his weigh in weight and ring weight won't be to different.

ive seen pictures of him in training, my god he looks ripped.

I think he's referring to being on target for making weight i.e. the sort of weight you'd be at before boiling down/dehydrating on the day. I've heard Froch say he's never really out of shape, so walks around mid 170's. He's certainly not one for naturally putting on fat - he seems just to have one of those metabolisms. I think Froch is quite unique in terms of his weight making patterns. Other boxers tend to walk around at way above their weigh in weight and have to lose a lot more.
